Instructions:

For the shortcrust pastry, sift flour and powdered sugar and quickly knead with the other ingredients to form a smooth dough. Wrap in plastic wrap and let rest in the refrigerator for about 1 hour.

Line a baking sheet with baking paper and preheat the oven to 200 °C.

Roll out the dough thinly on a floured work surface. Cut out large circles with a round, curly cookie cutter. Cut out three small stars in half of each circle.

Place on baking sheet and bake for about 10 minutes. Allow to cool.

Stir the jam until smooth and spread it on the circles without holes. Place the other cookies on top. Before serving, sprinkle the Linzer eyes with powdered sugar.

Preparation Tip:

If you like, you can of course use another jam for the Linzer eyes.
