For the herb honey, rinse the herbs with cold water and carefully shake dry or spin dry. Pluck the leaves from the stems and put them in a bowl. Now add the vinegar and honey and puree the mixture with a hand blender. Pour into carefully cleaned jars and close tightly. Store the herb honey in a cool and dark place.
