A simple but delicious cake recipe:

Put flour in a bowl, make a well in the center, crumble the yeast into it. Pour in a little sugar (2 tablespoons) and a little bit of lukewarm milk (about 2-3 tablespoons), leave with the lid closed for about 15 minutes.

It goes especially fast in the lukewarm oven.

Add sugar and grated lemon peel to the flour. Stir the dampfl with the remaining milk, melted butter and one egg. Meanwhile, knead the dough until it separates from the edge of the bowl. Cover and let rise for at least half an hour. It can also be left to rise overnight, which is a good way to prepare the dough.

Three delicacies can be made from this basic dough:

Windmills

Roll out the dough 1/2 cm thick and cut squares of 10 x 10 cm. In the center, shape a teaspoon of strawberry jam. Notch corners, brush corners of dough with egg yolk and place over filling.

Put the windmills on the baking tray and bake again. Bake for about 20 minutes at 180 to 200 degrees Celsius (convection oven 150 degrees Celsius). Glaze: sift 150 g powdered sugar and mix with the juice of one lemon (milk or water) until smooth.

Raspberry pockets

Roll out dough and cut out circles of 10 to 12 cm. Filling: 250 g fresh raspberries, 50 g ground almonds, 100 g pistachio kernels, 50 g sugar, 1 lemon.

Mix crushed raspberries, grated almond kernels and crushed pistachios with sugar and grated lemon peel.
