Instructions:

Roast all the pine nuts in a non-stick frying pan without fat. For the dressing, finely slice the onion and mix it with the lemon juice and half of the pine nuts. Mix in olive oil and balsamic vinegar. Season to taste with salt and pepper. Marinate the cleaned spinach and basil leaves with the dressing and arrange on plates. Slice the goat cheese and place on top of the salad. Sprinkle with the remaining toasted pine nuts.
