Rinse cold beef, dry, remove fat and tendons and cut into cubes of about 2 cm. Peel and quarter potatoes, peel and halve onions. Place separately on plates and cover with cling film.

Put some of the thicker part on top of the coconut milk in a large saucepan and bring to a boil. Mix in massaman curry paste and make about 1 min, add beef cubes, rest of palm sugar, fish sauce, coconut milk, peanuts, bay leaves, lime juice and water.

Simmer beef cubes in this mixture at low temperature with lid slightly open for about 50 min on low flame. Add potatoes and onions and simmer for another 20 minutes.

Take out bay leaves and bring curry dish to table.
