* Remove the skin from the sweet potato and cut into fine long strips.
* Halve avocados, remove pit and scrape flesh from skin with a spoon. Mash with lemon and apple juice.
* Arrange sweet potato strips on plates, top with avocado cream and sprinkle with chopped herbs as desired.
