For the rainbow muffins, mix eggs, sugar and butter well until the mixture is nice and fluffy. Now add the remaining ingredients (after adding flour, do not mix too long).

Divide the dough into four equal parts and color each part. Which colors you take is up to you, I used red, blue, green and yellow.

Divide the batter into 12 cupcake molds (I always start with the lightest color and carefully layer the others on top) – a cupcake mold is an advantage as the batter is relatively runny.

Bake the rainbow cupcakes at 200 °C in a preheated oven for 20-25 minutes and check with a wooden stick if they are done.

Preparation Tip:

Food coloring is available in powder form in some pharmacies or on the Internet. For lighter colors, such as yellow, more food coloring is usually needed, for darker less. In general, it can also be said that all colors dye differently, so my specification (1 tsp) is only to be understood as a guideline.
