For the vanilla cream, stir the custard powder with a few tablespoons of milk and the yolks until smooth. Bring the remaining milk, cream and sugar to a boil and then pour in the custard powder mixture, stirring constantly.

Continue to boil for a short while. Pour into a bowl, cover tightly and let cool completely. Stir gently until smooth before use and fold in a little whipped cream if desired.

Preparation Tip:

This vanilla cream is perfect for filling shortbread bowls, meringue rolls or choux pastry doughnuts.
