Cool the chickpeas and soak them in the water for one night. Add the bay leaf spice and soften the peas for about 45 minutes. Drain in a sieve and remove the bay leaf spice. Puree in two portions in an electric chopper.

Squeeze the garlic and add it. Chop the onion very finely and add to the chickpeas form with a little water and all the remaining ingredients.

Knead everything into a smooth dough. Form 3 cakes per person and coat them in sesame seeds. Now fry in a little fat at moderate temperature until golden brown on both sides.

Sauce of yogurt, feta cheese seasoned with garlic. Together with some olives and tomato slices, this makes a light meal for summer or an attractive addition to your next party. But the chickpea patties go just as well with ratatouille or our local vegetables such as kale or cabbage with carrots. Or just as well with Brussels sprouts in cream sauce.

Tip: Use creamy natural yogurt for an even finer result!
