Clean leeks, cut lengthwise into strips and rinse. Cook in boiling salted water for two minutes, rinse and drain in a shallow gratin dish. Pat steaks tenderly flat, season with salt, season with pepper and spread thinly with mustard. Place half a slice of ham on each steak and brush with a tiny bit of paradeis pulp. Finely dice the cucumbers, mix with drained, chopped capers and half a bunch of finely chopped basil and spread evenly on the steaks. Fold the steaks and place on top of the leeks.
