Instructions:

In a large shallow baking dish, mix mint, olive oil, juice of one lemon, garlic and salt + pepper. Add the meat, turn to coat the other side in the marinade and place in a cool pantry for up to 2 hours or in the refrigerator for up to 8 hours. Let stand at room temperature for 30 minutes before cooking.

If using wooden skewers, soak four or five 15 cm skewers in water for 30 min. Place the marinated meat pieces on the skewers and cook under the heated electric grill or on the garden grill for 2.5 to 3.5 minutes on each side.

Serve on a bed of lettuce with tomato slices.
