For the chanterelle pancakes, sauté the finely chopped onion in a little oil until translucent and add the cleaned, finely chopped chanterelles. Sauté until the juice has boiled away.

In the meantime, peel and coarsely grate the potatoes. Squeeze well and mix with the remaining ingredients and the chanterelles. Shape into flat dumplings and fry in hot oil.
