Marinate turkey breast fillet with a little canola oil, green peppercorns and rosemary sprigs for one night.

Grate peaches with kitchen paper, remove seeds and cut into wedges. Cut chili pepper into fine rolls.

Pluck off mint leaves and cut into strips. Cut ham into fine cubes.

Mix eggs, flour, whipping cream and baking powder to a viscous dough, add ham, season with salt and nutmeg.

Season turkey fillet with ground pepper. Brush broiler with a tiny bit of oil.

Turn waffle iron on highest setting. Pour waffle batter, finish waffle until golden brown, cut hearts.

Place turkey fillets on broiler and cook until juicy on both sides. Place rosemary sprigs on top to enhance flavor.

Saute chili peppers in a small amount of canola oil until translucent. Add peach and sauté, also add honey and green pepper.

Dust everything together with curry, add peach juice and simmer. White wine in form, finally fold in the mint.

Serve:

Place waffle hearts on flat plate, place turkey filet slices on top. Pile curry peaches on top and pour sauce all around. Garnish with bunches of mint.
