Instructions:

For the rice salad, cook the rice in salted water until al dente. Cut the red onion into fine strips, the mushrooms into fine slices. Cut the snow peas into fine strips, peppers as well.

Chop the onion into fine rings and the chili pepper. Sauté all the vegetables in a pan with a little oil and season with curry.

Mix the vegetables, shrimp and rice and marinate with lime juice, sugar, coriander and season to taste.
