In a mortar (or with a blender) crush the pitted olives with anchovies and tuna. Mix the mixture with mustard and add the chopped capers. Drizzle in the olive oil in a thin stream and blend until homogeneous, stirring constantly with the blender. Season to taste with pepper and cognac. Spread on fresh, crusty baguette or on toasted white bread, as desired.
