Instructions:

For the salmon fillet:

Divide the salmon fillet into four immediately sized pieces, season with salt, pepper and a tiny bit of ground cumin. Place the pieces – not too close together – on a greased baking tray. Bake at high heat (220 °C ) for 7 to 9 minutes until golden. Sauté shallots in oil until translucent, blanch peas in well-salted water for 30 seconds, then mix both together. Serve the salmon with shallots and sugar snap peas, offering the cider sauce with it.

For the cider sauce:

Melt the sugar in a saucepan. Add the apple cider vinegar and the turnip pieces, cook and remove from the saucepan. Add the whipping cream to the finished gravy and cook. Season to taste with salt and freshly ground pepper. Add the rutabagas to the sauce just before serving.
