For the dough for the ham croissants, mix the liquid butter with flour and yeast. Mash the cooked potatoes and knead them with the dough. Add milk, season with salt and nutmeg, cover the dough and let it rest. Cut ham into small cubes. Wash and finely chop the parsley.

Mix ham cubes with some creme fraiche and add chopped parsley. Flavor with salt, pepper and some grated organic lemon. Roll out the finished dough and cut it into squares. Fill them with the ham filling and fold them into a triangle. Form the triangle into a croissant. Brush the ends with whisked egg yolk, which acts as a glue. Brush the ham croissants with egg yolk and bake in a preheated oven at 200° C for 10-15 minutes until golden.
