Instructions:

Cut broccoli and cauliflower into larger pieces. Finely dice onions and sauté in butter. Add broccoli/cauliflower pieces and sauté as well. Pour in clear soup and cook for 15 minutes with the lid closed. Take out a few pieces and separate a handful of roses from each of the cauliflower and broccoli and reserve, add the rest back to the saucepan. Add whipping cream to the saucepan and blend until smooth. Stir roux with milk, add to saucepan and bring to a boil.

Season soup with salt, pepper and nutmeg. Add remaining roses and diced ham and heat for 5 minutes.

Tip: It is best to use your favorite ham – then your dish will taste twice as good!
