For the Tyrolean Gröstl, peel the potatoes and cut into slices. Peel and finely dice the onion. Heat the oil in a pan and brown the onion over medium heat.

Finely dice the bacon and add. Cut leftover roast into pieces and add to the pan with the potatoes as well.

Season well with salt and pepper. At the end refine with parsley.
