For the dressing, whisk together the crème fraîche, juice of one lemon, honey, anise, and salt and pepper in a large salad bowl. Brush the beet under running water, peel thinly and grate on a raw vegetable grater.

Rinse the apple, quarter it, remove the core and grate it as well. Remove the peel from the banana, cut it in half lengthwise and cut it into small pieces. Add these ingredients to the sauce form and mix everything together well. Decorate with chopped nuts.
