For the asparagus vinaigrette, peel the asparagus, remove woody ends and boil or steam in salted water until tender. Blend asparagus with olive oil to a puree. Let cool and now whisk with salt, vinegar, pepper and oil to a sauce.

Remove stem, seeds and side walls from chili pepper and chop finely. Wash and dry the herbs and chop them finely as well.

Now add herbs and chili to the asparagus vinaigrette and stir everything well.

Preparation Tip:

Serve asparagus vinaigrette with fresh leaf salads or grilled fish!
