Mix all the ingredients. Prepare a rectangular plastic wrap and spread the mixture evenly on it. Cover the cutlet with it and leave it in the refrigerator for a week.
For cooking the ham you need a boiling thermometer. Boil all the ingredients with the water and put in the meat, then keep the temperature at 77 °C. Steep for one hour and cool in the clear soup.
