Instructions:

Whip the egg whites until stiff. Make a creamy batter with the remaining ingredients and stir in the beaten egg whites just before baking. Bake the pancakes until they are even.

Peel the mango or papaya and cut into pieces of the same size. Make a creamy dressing with caramelized sugar, juice of one lemon and lemon zest and marinate the fruit pieces with it. Thicken with coconut oil if necessary.

Spread the amount evenly over the pancake and roll up.

Sprinkle the individual crespelle with sugar or possibly honey and gratinate in the oven at 140 C° for 10 minutes.

Flavor the crème fraîche with lemon, honey and vanilla flavoring and spread evenly under the pancake.
