From one hot rinsed orange, grate the peel and squeeze the juice. Peel the second orange, removing the white skin as well. Remove the fillets from between the membranes, reserving the juice. Rinse the peppers, cut them in half lengthwise, remove the seeds and cut them into slices (wear rubber gloves).

Cut the meat into strips and marinate with orange juice, zest and peppers for about 30 minutes.

Peel the carrots and sweet potatoes. Cut carrots into strips, sweet potatoes into coarse cubes.

Place both types of beans in a sieve, rinse and drain thoroughly.

Clean the spring onions, rinse thoroughly and cut into rings.

Drain the meat, reserving the juice. Season with salt and pepper.

Fry in hot oil in batches until hearty. Dust the meat with flour.

Add carrots, sweet potatoes and beans. Add orange marinade and stock and do the whole thing in a closed saucepan for 10 minutes.
