Remove leaf and stem end from pineapple. Cut the pineapple into quarters, remove the skin and cut the hard middle part into small pieces. Cut the flesh into small pieces, crush and pass through a sieve.

Mix pineapple puree, pineapple juice and mango-lemon nectar. Fold in coconut cream and egg yolks with a whisk. Add a little lemon juice to taste.

Divide ice cubes evenly among the above number of glasses and pour the drink on top. Top up with soda water. Add one scoop of pineapple ice cream and one scoop of vanilla ice cream.

To decorateRinse and dry the carambola and cut into slices. Notch one carambola slice each and stick it to the rim of the glass.
