Instructions:

Clean the cauliflower and soften in salted water. Cook a few roses just al dente, then remove and quench. Brown briefly in butter. Drain the remaining cauliflower, crush and mix with whipped cream and crème fraiche. Season to taste and serve sprinkled with the fried roses.
