For the coconut pancakes with curd filling, mix flour, eggs, vanilla sugar, salt and coconut. Add the milk and mix everything into a smooth dough.

Let the dough rest for about 15 minutes. Heat oil in a pan and pour in some of the batter so that the bottom of the pan is thinly covered with the pancake batter.

Bake the pancake on both sides for about 1-2 minutes, remove and keep warm. For the curd filling, mix curd, sour cream, powdered sugar, vanilla sugar, lemon juice and rum.

Spread the curd filling on the coconut pancakes and roll them up.
