Make prepared long grain rice in water. Remove cooked long grain rice from cooking pot, crumble and cool for 2 hours.

Steam sausage in water bath for 15 min, cool slightly and cut into fine slices.

Briefly rinse shallot garlic and cilantro sprigs, dry and finely chop.

Rinse cucumber and cut diagonally into fine slices.

Remove peel from onion and cut into fine slices.

Beat eggs lightly.

Heat 1 tbsp oil in frying pan, pour in eggs and make an omelet, season with salt and pepper. Remove and cool. Sprinkle with a tiny bit of shallot garlic, roll up and cut into narrow strips.

Soak dried crab tails in lukewarm water for about 15 min and then drain.

Heat remaining oil in frying pan, add salt and a few slices of onion and toss quickly.

Add the long grain rice, sausage, crab tails and the remaining onion to the frying pan and toss for about 15 minutes.

Finally, add the egg strips and heat through, tossing continuously.

Pour nuoc mam sauce into a sauce dish and place on the table.

Dressing: Fill everything onto a large serving plate. Sprinkle with scallion garlic and cilantro, garnish all around with cucumber slices.

Eating: Goes well with all dishes except entrées, soups, and egg and pasta dishes.
