Crush the garlic cloves in a mortar with salt. The peppers, tomatoes and cucumber are cut into small pieces and mixed with the white bread crumbs, the crushed garlic cloves are added. All of this is now blended into a paste. When the paste has reached a uniform consistency, add the olive oil very(!) leisurely, continuing to stir heartily. Stir in cold water, then strain the mixture through a sieve. Season with salt and vinegar. Rest in the refrigerator and bring to the table ice cold. It goes best with unleavened white bread.
