Stir the wheat flour with the sugar and the cream until smooth. Add 3 pinches of salt. Gently stir in 5 egg yolks, add chopped almonds and washed sultanas. Fold in the stiffly beaten snow and bake the Kaiserschmarren in hot clarified butter like a pancake. Finally, tear it into small pieces with a fork. Serve hot with powdered sugar. Serving: Cranberries, apple puree or other compote.
