Instructions:

Cut the meat into 4 cm long finger-width strips. Finely chop the spring onions and mix in a bowl with freshly grated ginger, soy sauce, chili sauce, rice wine and sugar. Add meat, mix well and marinate for about 4 hours. Turn meat repeatedly during this time. Transfer marinated meat including marinade into an ovenproof dish and roast in a preheated oven at 180 degrees for about 20 minutes. Then turn and cook for another 20 minutes. Lift out and stir in maple syrup. Drizzle with peanut oil and sprinkle with freshly chopped coriander greens before serving.
