Instructions:

For the pear compote, bring water and sugar to a boil and add the vanilla bean. Boil for about 5 min. until bubbling, then remove from heat. Peel and halve the pears, cut out the stems and bases well.

Use a ball cutter to cut out the core bunnies. Immediately place the pear halves in the sugar water to prevent them from discoloring. When all the pear halves are ready, boil the compote for about 5 – 7 minutes.

Test them with a toothpick to see if they pierce easily – don’t cook them too soft, they should be about as firm as fully cooked potatoes.

Then remove the vanilla bean and mix the pear compote with the amaretto, pour into jars and refrigerate. (30 minutes at 90 degrees)

Preparation Tip:

The pear compote goes especially well with vanilla ice cream and other desserts.
