Instructions:

First prepare the shortcrust pastry and let it rest in the refrigerator for about 2 hours. On a floured work surface, roll out the dough to a thickness of 3 mm and cut into strips (approx. 4 cm wide and 25 cm long).

Place on a baking sheet lined with baking paper and pre-bake in the oven at 170 °C for about 8-10 minutes.

For the macaroon mixture, coarsely grate the marzipan and mix well with the remaining ingredients. Using a piping bag, pipe 2 strips onto the outside of each of the pre-baked shortbread strips.

Bake again in the oven at 190 °C for about 5 minutes, remove and fill the still hot spaces with currant jam (heat if necessary).

Allow the cookies to cool and cut into 2 cm wide strips.

Preparation Tip:

For the railwaymen use a homemade solid jam.
