For the raw vegetables with curry sauce, peel the kohlrabi and beet and grate them medium-fine with a vegetable grater.

Wash the radishes including the leaves. Choose some nice leaves and cut them into fine strips. Slice the radishes into small slices and mix with the leaf strips.

For the curry sauce, mix the diced shallots and curd with lemon juice and safflower oil. Stir in honey and curry and season with pepper and salt. Stir half of the alfalfa sprouts into the curry sauce.

Arrange kohlrabi, beetroot and radishes on plates and serve the raw vegetables with curry sauce and the remaining alfalfa sprouts.
