Instructions:

Rub the meat with salt and pepper. Put it in a roasting pan and add water. Put the roast in the oven heated to 180 °C and roast for about 75 minutes. In between, pour a little clear soup and wine over the roast.

Stir the brown bread, 4/5 of the cranberries and ground cloves together. Fifteen minutes before the end of the roasting time, spread the mixture evenly over the meat.

At the end of the cooking time, remove the meat and keep it warm.

Dissolve the gravy with remaining red wine and remaining clear soup. Remove the skin from the shallots and caramelize them in butter and sugar. Add to the sauce with the chanterelles. Lightly thicken with whipped cream and refine with the remaining cranberries.
