Among the oldest beverages are “medki” made from honey, hops and water. The hot “Sbiten” was drunk much and everywhere in Russia like tea, before the real tea was introduced from China, which the broad classes of the population could afford anyway only some time later, in the 19th century. Sbiten is drunk hot and is suitable for the cold season. Its name comes from the verb “sbit” (to whip, stir together). Bring honey and sugar separately to boil in water (1) and (2), respectively, pour them together and gently bubble at low temperature. Constantly skim off the foam. Put the cloves, ginger and cinnamon in a saucepan. Add the water (3), cover and simmer gently for 15 minutes. Remove from the heat and steep for 15 minutes. Strain and add to the sugar-honey water.

Serve hot.

Note: Sbiten can be reheated repeatedly, but do not let it bubble.

Variations

Bay leaf, mint, cardamom and nutmeg are also suitable spices.

Tip: Cook only with high-quality spices – they are the be-all and end-all in a good dish!
