For the lean turkey goulash, heat the olive oil in a pot and sweat the onions in it. Pour in about 1/2 l of vegetable soup, add the spices and garlic and let it boil a bit.

Blend with a hand blender so that a few pieces of onion remain whole. Put the pot back on the stove, add the diced turkey and cook on low heat.

Add more soup if necessary. Season the turkey goulash to taste and serve with fresh pastries or spaetzle.

Preparation Tip:

If you like it spicier, add chili or harissa.
