Instructions:

Bring the soup to a boil and add the smoked meat and bay leaf. The meat should be completely covered. Cook for about 40 minutes until the meat is tender.

Cook the potatoes in a pressure cooker. Peel and mash.

Bring the milk to a boil in a saucepan and cook the garlic in it until soft, about 10 minutes. Add butter, salt and parsley and puree with a hand blender.

Pour the milk mixture over the potatoes and stir through. Add more milk if necessary. Season to taste with nutmeg and salt.

Cut onions into thin slices. Heat enough oil in a frying pan to float the onion rings. Fry the onions until golden brown. Pour off the oil and drain the onions on a paper towel.

Slice the smoked meat and serve with the mashed potatoes and fried onions.

Preparation Tip:

If you prefer the mashed potatoes finer, press the cooked potatoes through the potato press. The smelted soup tastes especially good with semolina dumplings.
