For the lamb with honey-apple sauce, first prepare the honey-apple sauce. To do this, finely dice the onion and the apple, sauté in a pan with the butter, add the honey, sauté briefly and pour in the apple juice. Boil gently for 5 minutes and add the vegetable stock. Cook for another 5 minutes and thicken with the cornflour mixed in cold water. Preheat the steamer to 100°C.

Cut the grapes in half and remove the seeds. Heat olive oil in a frying pan and fry the grapes until quite hot and crispy. Deglaze with the balsamic vinegar and add the broccoli florets. Season everything with salt and pepper and arrange on a plate.

Cut the saddle of lamb into diagonal, even pieces and place on top of the vegetables. Then pour the sauce all around.
