For the wholemeal shortcrust pastry, quickly mix the flour with butter, egg, a pinch of salt and the cold water (or milk) in a bowl or on the work surface to form a dough.
Cover with cling film and leave to rest in a cool place for a short time.
Process the wholemeal shortcrust pastry as desired.
