Remove the skin from the onion, cut into cubes and sauté in olive oil in a saucepan. Remove the peel from the potatoes, cut into fine cubes and add to the onions. Extinguish with white wine and fill up with clear soup. When the potatoes are soft, add whipped cream and let it bubble up repeatedly.

Then fold in the wild garlic butter and finely blend the soup with a hand mixer.

Season the soup with freshly grated nutmeg, salt and freshly ground pepper.
